Ingredients

    8 large Egg, fresh, whole, raw
    .25 cup Milk, 1%
    1 medium (2-1/2" dia) Onions, raw
    2 serving Yellow Bell Pepper, 1 serving equals 1.8 oz or about 10 strips
    2 cup, pieces or slices Mushrooms, fresh
    1 cup Cheddar Cheese, Kroger shredded Sharp Cheddar

Directions

Chop peppers, onions, mushrooms and add to hot skillet sprayed with EVOO. Sautee until veggies are tender. Add eggs and milk to bowl and whisk until frothy. Add veggies and cheese, salt and pepper to taste, and stir to combine. Pour mixture into 8.5x11 baking dish sprayed with EVOO and bake 35-50 minutes, checking for the middle to set. Allow to cool several minutes before cutting and serving.
