Ingredients

    Ingredients:


    Jasmine Rice, 3 cup
    3-Chicken Breast, no skin,- Boiled -cubed
    *Coconut Milk, 1 cup
    Madras Red Curry Paste, 2 tbsp
    Eggplant, fresh, 1 cup, cubes
    Green Peppers (bell peppers), 1 cup, strips
    Yellow Peppers (bell peppers), 10 strips
    Shiitake Mushrooms, 1 cup pieces

Directions

Boil rice until sticky
Boil chicken and the let rest for a few minutes until cooled down-Then chop up into cubes
Then in large Pan add 2 tbsp curry paste stir in pan alone..until pan is hot
Then add the chicken coat well
Then add coconut Milk stirring
add all the Vegetables for 10 minutes let steam
Last add the Mushrooms
simmer 5 minutes

Let stand 10 minutes

pour over rice in Bowl and serve
