Introduction

Number of Servings: 8

Ingredients

    Watermelon - 6 cups, cubed
    Vidalia or other sweet onion thinly sliced into rings
    1 small jicama, cut into matchsticks
    1/4 cup of cider or red wine vinegar
    2 tbs extra virgin olive oil
    1/2 cup crumbled feta cheese
    1/2 tsp salt
    1/4 tsp black pepper
    1/2 tsp granulated sugar
    2-3 tbls chopped, fresh mint leaves
    Fresh mint sprigs

Directions

In a small bowl, combine the vinegar, salt, pepper, and sugar and whisk until salt and sugar are dissolved. Slowly whisk in the olive oil, a few drops at a time. Add in the chopped mint, taste, and adjust seasonings.
In a large bowl, combine the melon,jicama, onion, and feta. Pour the dressing over the melon mixture and toss gently until everything is coated and evenly mixed. Garnish with mint sprigs.
