Introduction

I don't eat onions, so I removed them from this recipe. Original recipe called for 1 small reod onion. I also excluded the 8 tortillas for low carb days. Just add 2 tortillas per serving. Ingredients

    2.0 tsp Chili powder
    0.5 tsp Cumin seed
    0.5 tsp Garlic powder
    0.5 tsp Onion powder
    0.5 tsp Paprika
    3.0 dash Pepper, black
    1.0 dash Salt
    1.0 lime yields Lime Juice
    24.0 oz Shrimp, cooked
    1.5 tbsp Extra Virgin Olive Oil
    1.0 Med. Green Bell Pepper
    1.0 Med. Red Bell Pepper
    1.0 Med. Yellow Bell Pepper
    28.0 grams Cilantro, raw

Directions

Preheat oven to 450 degrees. In a large bowl, combine bell peppers, shrimp, olive oil, salt and pepper and spices. Toss to combine. Spray baking sheet with non stick cooking spray. Spread shrimp & bell peppers on baking sheet. Cook at 450 degrees for about 8 minutes. Then turn oven to broil and cook for additional 2 minutes or until shrimp is cooked through. Squeeze juice from fresh lime over fajita mixture and top with fresh cilantro. Serve in warm tortillas or over rice. Serving Size: 4 Servings
