Slow Roasted Rabbit Slow Roasted Rabbit

Ingredients


    Olive oil - 2 T
    garlic - 4 cloves
    salt - 1 T
    Concentrated orange juice - 1/2 cup
    rabbit - ( 1 ) 2.5 lbs cut into 6 pieces
    red onion - 2 - sliced thin
    lemon juice - 1/2 cup




Directions

Blend first four ingridients
place rabbit pieces in zip lock, bath with orange juice mixture. Put in fridg for 1 hour.

preheat oven to 400 degrees.

Pour rabbit into covered casserol - put in hot oven for 15 minutes - lower heat to 325 - roast one hour.

In the mean time marinate the slliced red onion in the lemon juice and salt.

To serve place rabbit on bed of fresh green lettuce and top with onion sllices.

    Incredible!
    I used these ingredients except for the olive oil and put it in the slow cooker on High for 4-5 hrs. It was exceptionally good!! - 7/16/12
