Ingredients

1/4 cup Soy Flour
1 to 2 tbsp cocoa (dry powder, unsweetened)
2 to 3 tsp Splenda (depends how sweet you like it)
1 tsp Baking Powder
1 small egg or 2 egg whites
1 tsp water
1 tbsp melted butter
Directions
Use a glass bowl or microwave-safe bowl to combine all indgredients. Add all the dry indgrients together, and blend well with a whisk or spoon. Add wet indgredients. Melt the butter first, and add to your bowl. Then add egg (or egg whites), vanilla extract, and a dash of water. If your batter is not adhering well together, add a little bit more water, or milk if you would like. After blending together with a whisk, put the bowl in your microwave for a minute to a minute and a half. Afterwards you should have a tasty treat to enjoy!
I have added alot of things to this recipe including different nuts (pecans, walnuts, almonds), and whipped cream. If you get some low-carb ice cream or nonfat frozen yogurt, mix your warm cake with it, and it tastes amazing! Or you can let your cake cool, and frost it with sugar free pudding, whipped cream, or even real frosting! I found this is the perfect portion for my boyfriend and I, who both share flour/wheat/yeast allergies.
