Introduction

Ingredients

    Crust:

    2 cups flour
    1 tsp salt
    10 tblspn butter
    4-5 tblsp cold water

    Pie Filling:

    2 14.5oz cans Red Tart Cherries in Water
    1 c sugar
    3 tblsp corn starch

Directions

Preheat over to 425*.

When making the crust I find making one crust at a time is better.

Mix the flour and salt together. Cut in the butter until mixture looks like crumbs. Add water 1 tblsp at a time mixing the water in. When dough comes together stop adding water. Allow dough to rest on countertop for 5-10 minutes. Roll dough out to fit into a 9 in pie pan. Do the same with the second crust.

While dough is resting drain the 2 cans of cherries into a sauce pan add the sugar and corn starch. Whisk it all together. Put pan on medium heat, whisking constantly. Allow miture to thicken and boil. Once thicken remove from heat and add cherries.

Put the bottom crust in the pan add the cherry mixture and top tith the top crust. Cut vent holes in the top crust. Put pie on a baking sheet to catch any run over. Cook pie for 35-45 min.
