Introduction

A clean and delicious lemon curd that I use to make delicious clean yogurt. A clean and delicious lemon curd that I use to make delicious clean yogurt.
Number of Servings: 6

Ingredients

    4 large Egg, fresh, whole, raw
    2 tbsp Coconut Oil, melted
    2 tbsp Butter, melted
    4 serving Stevia in the Raw

Directions

1. Whisk eggs well and pour into a small pan.
2. Add the stevia, juice of 2 lemons, zest of one lemon, coconut oil and buttter.
3. Place pan on stovetop and cook over medium heat, stirring CONSTANTLY. Do not allow to boil as this will curdle or scramble the eggs. Stir for 12-15 minutes until thick enough to coat the back of the stirring spoon.
4. Pour mixture from the pan through a fine sieve. DO NOT SKIP THIS STEP.
5. Pour mixture into a glass container and allow to cool until completely cold, stirring occasionally so a film doesn't develop.
6. When cold, cover and store in the fridge.
