Introduction

Like potato soup, but with the addition of fresh carrots and green beans. Like potato soup, but with the addition of fresh carrots and green beans.
Number of Servings: 6

Ingredients

    2 C fresh green beans, cut into 1 inch pieces
    2 C potato, peeled and diced
    1 C carrots sliced.
    2 C water
    2 C skim milk
    1 tsp salt
    1/4 tsp pepper
    minced onion

Directions

Cover potatos and carrots with a very small amount of water in pan. Bring to boil and turn down and simmer 5 minutes covered. Add salt, pepper, and green beans. Cook about 15 minutes more or until vegetables are tender. Add milk to vegetables without draining water. Heat gently until broth is hot but do not boil. Makes 6 1/2 C servings.
