Ingredients

    225 gram(s) Flour, Self Raising (UK) (by WOTSHEWROTE)
    110 grams Butter, unsalted
    225 gram mixed dried fruit (500g) - sultanas, currants, raisins, orange peel & lemon peel (by SHIRHPP)
    1 large Egg, fresh, whole, raw
    150 g Semi-Skimmed Milk (ml) (UK)
    30 gram(s) Glace cherries (by YVONNECP)
    4 tbsp chopped walnuts
    1 Tsp Mixed Spice
    110 grams Granulated Sugar

Tips

Preheat oven to 180 degrees centigrade

Rub the butter and flour (sifted) together between your fingertips until it resembles fine breadcrumbs. This is crucial to get a good bake. Then add sugar, dried fruit, cherries, walnuts and mixed spice and mix it all together.

Add the egg and milk and stir it all together with a wooden spoon to get a soft "dropping" consistency.

Put into a 6" cake tin (or 2lb loaf tin), spread it out evenly and sprinkle some demerara sugar on top, pressing it down lightly with the back of a spoon, to create a "crunch" on top at the end. Bake for an hour to an hour and fifteen minutes or until putting a skewer into the middle produces a clean result when bringing it back out.

Cook for 1 hr at 180 degrees centigrade
