Introduction

Yummy pasta with Shrimp that is low fat and packed with protein and iron. I like to use butter however olive oil works as well.

Number of Servings: 6

Ingredients

    16 oz Shrimp
    4 cup Spinach, fresh
    4 cup Spaghetti, cooked without added salt (pasta)
    4 clove Garlic
    2 pat (1" sq, 1/3" high) Butter, salted
    1 dash Salt
    1 dash Pepper, black
    1 cup Saputo Petals Parmesan cheese, serving = 1/3 cup (by METTABEE)
    4 medium whole (2-3/5" dia) Red Ripe Tomatoes
    4 tbsp Basil

Tips

For a lower calorie or wheat free option use zucchini or rice noodles instead of pasta.


Directions

Cook pasta according to pasta directions. Sauté shrimp, garlic, salt and pepper until shrimp is pink.

Add diced tomatoes and spinach and toss until Spinach is wilted.

Add cooked pasta and fresh chopped basil. Combine and sauté until warmed through.

Transfer to large serving dish and top with parmesan petals. Garnish with fresh Italian parsley if desired. Bon appetite.
