Ingredients

3 oz (20 halves) Pecans
3 oz Walnuts
3 oz (85 seeds) Pumpkin seeds
16 tsp sukrin good
1 tbsp Sesame Seeds
.5 tbsp Raw, Organic Yacon Syrup (by CFLEEMAN)
3 tsp Cinnamon, ground
1 tbsp Butter, salted
Tips
this is a very low-carb snack, though the yacon syrup appears to add carbs. since the carbs come from inulin, which is indigestible, the total net carbs should be about 2g per serving.
Directions
break raw pecans and walnuts into small pieces, slightly bigger than 'chip'-sized pieces you'd buy at the store.
melt butter in pan over medium-high heat. lower heat to medium. add pecans, walnuts and pumpkin seeds. stir over medium heat for about five minutes, until all nuts are coated with butter and toasted.
add sukrin gold and cinnamon, stir until mixed and turn off heat.
add yacon syrup to nuts and stir until all ingredients are well-coated.
Turn out of pan onto parchment paper and separate with a spatula so that it can all cool down. It will be kind of sticky. If, after everything has cooled down and it's still sticky, turn the oven on to 200, then turn off and put granola in the oven to finish drying in the warmth.
break into granola sized chunks and store in an airtight container lined with parchment paper for up to a week.
