Ingredients

    19.68 oz Tyson boneless, skinless chicken breast (about 1.3lbs)
    1.5 cup Rice, white, long-grain, regular, raw, enriched
    .75 cup Peas and carrots, frozen
    2 oz Hillshire Farm Beef Polska Keilbasa, 2 oz.
    2 tbsp Sofrito Sauce
    .5 cup Cream of Chicken Soup
    1 serving Knorr Chicken stock cube (by BRANDI1809)
    .2 serving 3 Pepper & Onion Blend, Kroger (frozen) - 1 cup
    1 tsp adobo goya (by RBOURGETGRAS)
    1 serving oil, vegtable (1 tablespoon) (by JOHNANDRES2)
    .5 cup, chopped Onions, raw
    6 gram(s) Fresh Garlic (1 clove = 3g) (by AMBUDMAN)
    0.2 cup cilantro (fresh) (by MINDTHEGAP7)
    1 pk Goya Sazon con achiote
    1.5 cup of water

Tips

You can substitute the sausage for bacon or turkey or the veggies for beans. Still very good.
Makes around 11-12 1-cup servings measured.


Directions

Cube your chicken breast into 1 inch pieces give or take.
Sprinkle some adobo over the chicken, set aside
Set your electric pressure cooker to sauté and add the oil.
While that heats, chop onions, peppers, cilantro and garlic.
Chop the sausage (about a 2" piece of the whole sausage) into small cubes.
Add the onions, peppers, cilantro, garlic, frozen veggies, chicken and sausage to the pot to brown stirring constantly to ensure all sides are cooked.
Once the chicken no longer looks pink, add the soup, chicken stock, sofrito, Sazon and uncooked rice.
Stir until all ingredients are well incorporated.
Add enough water barely to cover the rice (about 1.25 -1.5 cup) and stir again.
Cover and set your pressure cooker to rice/risotto setting for 18 min.

Serve hot!
Prepare to have a party in your mouth!!
