A delicious and very quick dinner for two. Feel free to tweak the spices and seasonings - I like mine pretty spicy, but you can go easy on the garlic, ginger and chili if you prefer a milder dish.

Ingredients

    250g prawns, fresh or defrosted
    1 bunch of spring onions, finely sliced
    3 cloves garlic, finely sliced
    1 tsp ginger root, finely sliced
    1 tbsp fish sauce (could substitute with soy sauce)
    1 tsp chili flakes (could substitue with chili powder)
    1 fish stock cube
    2 blocks of fine egg noodles
    Juice of half a lime
    Fresh coriander, to taste

Directions

Add a little water to a medium-sized saucepan, enough to fill it by an inch or so, and bring to a simmer. Add the ginger, garlic, chili flakes and fish stock, and cook for a minute or two until the stock has dissolved.

Now add the noodles, fish sauce, spring onions and prawns. Cook for a few minutes until the noodles and prawns are cooked through. Add more water if necessary - you want the consistency to be somewhere between a noodle dish and a soup dish, with soft noodles sitting in a soupy sauce.

Add the lime juice and coriander, and serve immediately.

    This simple supper was a hit with the whole family (husband and two school-age boys). I doubled the recipe and substituted vegetable stock for fish stock, and soy sauce for fish sauce. The base had a wonderful miso flavor, and the lime juice added a subtle touch. Fabulous! - 2/10/11
