Ingredients

12 serving 1 Egg- large, fresh
3 cup Spinach, frozen
3 serving bacon, Farmland, Hickory Smoked Natural, 2 pan fried slices
.75 cup Coconut Milk (Silk)
6 oz Vlasic Sweet Roasted Strips Red Peppers (by NEWYORKKIM)
3 cup, pieces or slices Mushrooms, fresh
6 tbsp chopped Fresh Chives
Salt

Directions
Preheat oven to 350.
In a large bowl, whisk together eggs and milk. Season with salt & pepper and set aside.
Heat a medium-sized oven-safe skillet to medium heat.
Add bacon to pan and cook until slightly crispy, approximately 3-4 minutes.
Pour out bacon grease leaving a tablespoon or 2 still in the pan, place pan back on burner and add spinach
Stir until just wilted, about 2 minutes.
Add in roasted red peppers, mushrooms.
Once veggies are completely cooked, add everything including egg mixture into baking pan. Stir to mix everything together.
Transfer pan to oven and bake for no more than 30 minutes or until the frittata has set. (the eggs don't wiggle when you shake the pan)
Garnish with chives and serve!
