Ingredients

    2 tbsp chia seeds
    1 cup (8 fl oz) Water
    .5 cup, chopped red onions, raw
    .5 cups, white vinegar
    2 tablespoons Worcestershire Sauce
    .25 cup Monkfruit sweetner with erythritol
    1 tablespoon Xantham Gum

Tips

Choose a red onion that is quite dark. This will make the dressing a beautiful pink color.


Directions

Soak the chia seeds in water for one hour. Puree in blender until smooth and creamy. Add the remaining ingredients and process until smooth. Refrigerate for at least a half hour

The entire recipe makes 18 fluid ounces. Serving size is 3 fluid ounces or 81 grams which will be more than enough for 3 cups of baby spinach.
