Introduction

This sandwich is quick and easy to make. It can also be eaten cold, but I like it better after it's been pan-fried.
If you don't like relish, it can easily be substitued with mustard, or a light mayo.

Ingredients

    ~2 slices Ezekiel 4:9 Sprouted Grain Bread, or other hearty whole grain bread
    ~1 slice Lite Muenster cheese, or other light cheese
    ~2 slices Vegetarian Deli Slices, such as Yves
    ~2 teaspoons Pickle Relish

Directions

1. Spray a non-stick frying pan with PAM cooking spray, place over medium heat.
2. After the spray has heated, place the bread slices on the pan. Place the cheese and deli slice on top of one of the bread slices.
3. Cook until the bottom of the bread slices are crispy, and the cheese has melted, about 2 minutes.
4. Spread the pickle relish on top of the deli slices and cheese. Place the other slice of bread over the one with toppings.
5. Enjoy!

    nice but I would stir fry squash,mushrooms,onion and garlic and add with hot peppers stir fry and add to sandwich - 7/15/08

    Incredible!
    A simple and delicious sandwich that took almost no time to make. I loved how melty the cheese was, and the pickle relish was a tasty twist to a classic sandwich. Not to mention how protein-packed and healthy it is! A vegetarian's dream lunch. Can easily become vegan if made with vegan cheese. - 6/17/08
