I juice fast from time to time and this is very satisfying on those tough days or when you need to scale back on the calories for a meal. Use the spices to your desired amount. I like mine VERY spicy! Use a good veggie broth to make it vegan. Ingredients

    1 Can Chicken Broth
    2 Cups V8 Vegetable Juice
    Hot Sauce (to taste)
    2 tbsp Oregano
    Garlic (to taste)
    Black Pepper
    Salt (optional)
    Mushrooms (optional)
    Parmesean Cheese (to Garnish)
    1 tbsp Sofrito (or add grated onions)

Directions

Use spices to your desired taste. Heat just before boiling. Soup is good even if you do not add mushrooms. Substitute chicken broth for veggie broth if desired.
