Ingredients

2 boneless, skinless chicken breasts
1/2 large onion, rough chop
1 Tbsp garlic
1 Tbsp basil (dried)
some parsley
s&p
several cups of water
1/2 large onion
1 poblano pepper
1 Tbsp garlic, minced
2 tsp red pepper
1 tsp basil
2 tsp parsley

8 oz. sliced mushrooms
1 jar Emeril's Vodka Sauce
3 cups cottage cheese
1 egg
fresh chopped parsley
7 or 8 cooked lasagna noodles
3 cups mozzarella cheese
Directions
Put the first 7 ingredients in a large stock pot and bring to a boil. Turn heat to low and cover. Simmer about 25 minutes until chicken is cooked through and tender. Drain water (and save the broth) and chop or shred the chicken. Set aside.
In a large heated pot, spray pam and add onions, peppers, garlic, and spices. Sautee until transparent. Add mushrooms, and continue sautee until mushrooms are cooked to your liking. Add vodka sauce and chopped chicken, and simmer about 10-15 minutes.
In a small bowl, combine cottage cheese, parsley, and egg with a wisk until mixed well.
Now for assembly......
spray a 9X11 casserole dish. Place 3 or 4 noodles on bottom. Spread 1/2 of your cottage cheese mixture evenly across top of noodles. Ladle in 1/2 of your sauce mixture on top of cheese. Sprinkle 1 1/2 cups mozzarella cheese on top. Repeat.
Bake at 350 degrees until cheese is bubbly, about 20-30 minutes.
