Ingredients

6 oz Ground Pork Sausage, Lean cooked, drained
2 medium (2-1/4" to 3-1/4" dia.) Potato, raw
2 tbsp Onion (raw), chopped
.25 cup Green Pepper - Raw, chopped (by RKAVR8)
1 medium Egg, fresh, whole, raw
2 tbsp Taco Bell Home Originals - Mild Salsa con Queso (by ERMOTH)
Tips
can use any variety of rolled sausage, and same goes for the con queso. can add other ingredients such as jalapeno peppers, banana peppers, zucchini, mushrooms, but will alter the calorie count a bit.
Directions
over medium heat in skillet cook 6 oz. of lean ground sausage any variety til done.
shred 2 medium size potatoes and chop up onion and green pepper and add to meat and cook til potatoes are done, push to the side of skillet and add egg and scramble then toss into the mixture on other side of the skillet, turn down heat and add 2 tbsp. of mild salsa con queso and fold into the mix til evenly distributed.
Serve hot, stores well for about 3 days if any left over.
