Ingredients

    16 oz Shrimp, cooked
    1 large Zucchini, baby, sliced
    1 tbsp Extra Virgin Olive Oil
    16 oz Tomato, grape cut in half
    .5 tsp Oregano, ground
    .5 tsp Salt
    .25 tsp Pepper, black
    1.5 tsp Garlic
    .25 cup (8 fl oz) Water, tap

Directions

Heat 2 teaspoons oil in pan. Add zucchini n a single layer. Cook until bottoms are golden brown. Flip and cook until 2nd side is golden brown. Remove zucchini to separate plate.
Heat reamining oil in same pan. Add shrimp and sautee' about 2 minutes. Add tomatoes, oregano, salt, and pepper. Sautee' 1 minute and add garlic and water. After shrimp are done, return zucchini to pan aand toss. Then serve over noodles or couscous.
