Number of Servings: 6

Ingredients

    2 Cups, chopped or diced light meat cooked chicken
    4 Cups chicken broth (fat removed)
    2 Cups tomato Salsa
    1 (10oz) can Old El Paso Enchilada Sauce
    16oz. Velveeta Cheese Product
    Salt and pepper to taste

Directions

Mix all ingredients except the Velveeta cheese in a large pot. Bring to a slow simmer on medium heat. Chop Velveeta cheese into small cubes. Reduce heat of soup and add cheese. Stir cheese until melted. Serve as is or with baked corn tortilla strips.
