Introduction

Number of Servings: 4

Ingredients

    3 Tbs butter
    3 oz potatoes
    8 oz leeks (white only)
    2 cups vegetable or chicken stock
    1 cup milk
    2 bunches watercress

Directions

Slice the leeks & sauté in butter in a heavy pot on medium heat. Peel & chop potatoes & add to leeks. Add salt & pepper to taste (so light on both) and give a good stir. Pour in the stock, bring to a boil, cover & cook until the vegetables are soft (about 20 minutes). Remove the coarser stems from the watercress and chop the rest, leaving a few sprigs for garnish. Add to the pot & cook uncovered for 4 to 5 minutes. Don’t over cook or watercress will lose color. Puree in a blender, return to pot, add milk & reheat slowly. Adjust seasonings. Serve decorated with reserved springs of watercress.
