Introduction

Simple breakfast casserole good for any meal and will keep well in the fridge or freezer for a quick meal. Modified from recipe found online. You can substitute the grains as desired. Ingredients

    1.0 cup, chopped Onions, raw
    1.0 package (10 oz) Spinach, fresh
    0.5 cup Ancient Harvest Traditional Whole Grain Quinoa, 1 serving =.25 cup dry
    1.0 cup Dairy, Milk - Whole - 1 cup
    2.0 cup Sargento Classic Sharp Cheddar Fancy Shredded Natural Cheddar Cheese
    2.66 serving Baby Bella Mushrooms (3 oz)
    0.5 cup Bob's Red Mill buck wheat
    8.0 serving Jennie-O Mild Turkey Breakfast Sausage Lean, 2 0z
    16.0 serving 1 Egg- large, fresh

Directions

1. Cook quinoa and buckwheat according to package. 2. Preheat oven to 350 degrees. In a large bowl combine eggs, milk, salt and pepper. Whisk together and set aside. 3. Spray a large oven safe pan with olive oil. Add onion and cook for 10 to 12 minutes, or until tender. Add sausage and cook until heated through. Add Mushroom while cooking sausage. Remove from heat. 4. Stir onion mixture with cooked quinoa and spinach. Pour egg mixture over top, then top with cheese. 5. Bake for 45 to 50 minutes. Serve warm Serving Size: Makes 8 servings
