Introduction

Marinated Potato Salad Marinated Potato Salad
Number of Servings: 10

Ingredients

    1 1/2 tsp sugar
    1/2 tsp salt
    1/2 tsp paprika
    1/2 tsp dry mustard powder
    1/4 tsp pepper
    2 tbls white vinegar
    2 tbls lemon juice
    1/3 cup cannola oil
    3 pounds of potatoes
    2 tbls chopped onion
    1 cup light mayo
    3 hard boiled eggs

Directions

Boil 3 eggs
peal and boil potatos

mix together
sugar
salt
paprika
dry mustard
pepper
vinegar
lemon juice
cannola oil

cut potatos to desired size. Pour mixture above over potatos. Add chopped onions. Mix well. Let marinate in fridge for at least 2 hours.

Remove from fridge add Mayo and chopped hard boiled eggs. Mix well

garnish with Paprika and Parsley

    MAYBE I AM DENSE, BUT 1/3 CUP OGCAN. OIL???IS THIS A MISPRINT??I KNOW IT IS BETTER,I USE ITALL THE TIME.I JUST DO NOT UNDERSTAND IF THIS FOR REAL??????? - 6/22/08

    This is a great recipe and yes it uses 1/3 of a cup of oil but it makes 10 servings.
    This is my favorite potato salad recipe and before you give it a bad rating you should actually try it.
