Introduction

You may use shortening or butter, up to three ripe bananas, and up to two cups of flour. Metric version:
125 mL Butter, salted
125 mL Granulated Sugar
2 large Egg, fresh, whole, raw
375 - 500 mL Flour, white
5 mL Baking Soda
1 mL Salt
250 mL mashed Banana, fresh
125 mL, chopped Walnuts
5 mL Vanilla Extract

Ingredients

    .5 cup Butter, salted
    .5 cup Granulated Sugar

    1.5 cup Flour, white
    1 tsp Baking Soda
    1 dash Salt
    1 cup, mashed Banana, fresh
    .5 cup, chopped Walnuts
    1 tsp Vanilla Extract

Tips

1. Cream shortening and sugar. 2. Add eggs. Beat well. 3. Add flour, baking soda and salt. Stir quickly but only until blended. 4. Stir in mashed bananas, walnuts and vanilla. 5. Bake at 350*F with time depending on pan selected. 6. Stand in pan for 5 minutes before turning out onto wire rack to cool completely. 7. Wrap and let stand for 24 hours. (To be honest, I just mix up the butter, sugar, bananas and eggs and then add the dry ingredients. It still works fine. And then we eat it while still warm. )


Directions

350*F. 1 loaf @70 minutes. 18 muffins @20 minutes. 1Bundt @ 60 minutes. 2mini loafs @ 50 minutes.

Serving Size: 1 loaf, 18 muffins, 1 Bundt, or 2 mini loafs.
