Ingredients

2 cup all purpose flour, plus 1 tbsp
1 tbsp Baking Powder
1 tsp Salt
1 cup Unsalted Butter, softened
0.5 cup Granulated Sugar
0.75 cup, packed Brown Sugar
3 large, fresh eggs
1 cup Whole Milk
1.25 cup, Frozen Blueberries (unsweetened), divided
0.25 cup Granulated Sugar
0.5 tsp Cinnamon, ground
Tips
this cake can be inverted onto a rack and cooled before cutting. i serve from the dish.
i also like it with cherries or a mixture of cherries and blueberries.
Directions
preheat oven to 350.
in a bowl, whisk together 2 cups flour, baking powder and salt. set aside.
in a large mixing bowl, cream together butter, sugar, and brown sugar. mixing at medium high for a couple or three minutes. until fluffy.
add eggs one at a time, gently mixing after each.
when combined alternately add flour mixture and milk. mixing just until incorporated. do not overmix. briefly hand stir to finish.
toss 3/4 cup of berries with 1 tbsp a.p. flour to coat. then gently fold into batter.
spread batter into a prepped 9x13 pan. sprinkle remaining 1/2 cup of berries over the top.
combine 1/4 cup sugar and cinnamon together and sprinkle over the top of the cake.
bake at 350 for 40-45 minutes or until a toothpick inserted into the center comes out clean. cool at least 20 minutes.
