Ingredients

10 serving Tortillas, MISSION, flour tortilla, 8 inch, 49g
    114 gram(s) Tilamook Medium Cheese (by YOGAGIRL235)
2 cup, chopped Green Peppers (bell peppers)
    1 cup, chopped Onions, raw
    8 large Scrambled Egg
2 link, 5/lb Italian Sausage, pork
3 tbsp Extra Virgin Olive Oil

Directions

Slice sausage into thin rounds. Heat olive oil in a skillet over medium heat. When hot, add the sausage. While the sausage is browning, chop onion and bell pepper. When sausage is about halfway done, add onion. Cook for 3 minutes, stirring occasionally. Add bell pepper. Cook until vegetables are tender and sausage is cooked through. Season with salt, pepper, and garlic powder. Remove sausage mix to a bowl.
Crack 8 eggs in a separate bowl and whisk well. Pour into skillet, and scramble over medium heat.
Now assemble. Heat tortillas briefly, either in a skillet or in the microwave. One at a time, sprinkle 1-2 tablespoons of shredded cheddar, a couple heaping spoons of sausage mix, and 1/10th of eggs into tortilla. Roll and place aside. When all burritos are made, wrap each in a small piece of plastic wrap, then place in freezer bag and freeze.
To reheat, place one burrito on a plate in the microwave for about 2 minutes.
