Introduction

Ingredients

    1 cup whole wheat flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 3/4 cup Kashi Go Lean cereal
    3/4 cup light vanilla soy milk
    1/4 cup honey
    2 egg whites
    1/4 cup applesauce
    1 medium ripe banana

Directions

Spray muffin tin cups with cooking spray and preheat oven to 400 degrees.

In a small bowl, stir together flour, baking powder and salt.

Set aside.

In a large mixing bowl, combine cereal and milk and let stand for 2-3 minutes.

Add the honey and egg whites and beat well.

Stir in apple sauce and banana.

Add flour mixture and mix only until dry ingredients are moistened

Fill sprayed muffin tins.

Bake for 25 minutes.

    Great muffins! I used the protein powder sub and subbed chopped apples for the banana. Made them for my kids' lunches so put a little brown sugar on top but they didn't even need it. - 10/30/11

    Followed recipe as written, to keep the calorie content low I used unsweetened almond milk as well as unsweetened applesauce, my major problem was that these stuck to the paper liners I used :-( next time I'll use aluminum liners and triple spray with non stick spray. Other than that they weretasty - 6/19/11

    Made these yesterday and put them all in the freezer. Took one out this morning and zapped in the microwave. sprayed with "I can't Believe it's Not Butter" spray. Very tasty. I didn't have (Nor will I buy!) Soy milk.... so I used Skim milk and 1 tsp Vanilla. "-) - 8/9/08
