Ingredients

4 serving Al Fresco Apple Maple Breakfast Chicken Sausage
1 tbsp Extra Virgin Olive Oil
2 oz Cheddar Cheese
1 serving Apple, Gala (medium)
.25 cup, chopped Onions, raw
.25 cup Spinach, cooked
2 cup Egg whites, Naturegg Simply Egg Whites, 1/4 cup = 2 egg whites
Tips
I make 12 at a time and freeze half for an easy, on-the-go breakfast on busy mornings.
Directions
Preheat oven to 350 degrees.
Cut sausage, onions, spinach and apples into very small pieces (or run through a food processor).
Coat a skillet with olive oil and then cook sausage mixture on medium heat until fragrant- about 5 minutes. Season to your preference- salt, pepper, thyme and rosemary are good additions.
Spray a 12-cup muffin tin with non-stick spray. Portion out the sausage mixture evenly into each cup.
Top with egg whites and sprinkle with a bit of cheese.
Bake for 12-15 minutes or until set and slightly puffed up.
Enjoy!
