Introduction

A quick one pot dish that is filling and has a great bite! A quick one pot dish that is filling and has a great bite!
Number of Servings: 4

Ingredients

    1 Can Rotel, (diced tomatoes with green chilies) undrained
    1 Can Black beans, drained & rinsed
    1 Cup Brown Rice or White Rice
    1 Cup Water
    1 Cup Chicken Broth (or 2 chicken bouillon cubes plus 1 Cup water)
    1 tbsp Garlic Powder
    Salt & Pepper to taste
    1 tbsp Olive Oil
    1 Serrano Pepper, diced



Directions

Place all ingredients in a medium to large sauce pan. Bring to a boil, stir, cover and simmer for 14 minutes (or the time specified on the rice package).
Optional- sprinkle each serving with lowfat cheddar cheese and chopped green onions.

Makes 4 1-cup servings.
