Introduction

This is a delicious version of corn bread that substitutes a mixture of almond flour and coconut flour instead of wheat flour and substitutes Splenda packets (or your sweetener of choice) instead of sugar. It tastes great slathered with butter and served with a bowl of homemade pinto beans (a slow carb). Ingredients

    1 cup Yellow Cornmeal
    1 cup Almond Flour
    3/4 cup Coconut flour
    4 tsp Baking Powder
    1 tsp Baking Soda
    6 large Eggs, whole
    1.25 cups Coconut milk, unsweetened
    6 tbsp Butter, salted, melted
    9 packets Splenda

Directions

Mix dry ingredients and wet ingredients separately then blend and bake at 350 degrees for 30 minutes.

Serving Size: Makes 8 pie shaped slices
