Ingredients

    1 T olive oil
    4 chicken thighs or 2 pounds chicken breasts cubed
    2 1/2 cups fresh broccoli cut into florets
    1 10 oz can cream of clery soup or cream of chicken...Healty Request
    1/2 cup reduced fat sour cream
    1/4 cup reduced fat mayo
    1/4 cup water
    2 T dijon mustard
    2 t Worcestershire sauce
    1 t dried marjoram
    1/2 t black pepper
    1/4 cup bread crumbs
    1/2 cup Colby cheese shredded
    1/2 cup Parmesan cheese shreddded
    3 oz fresh baby spinich
    2 t melted light butter/optional

Directions

6-8 servings
Step 1
Preheat oven to 350
Step 2
Heat oil in pan over medium heat. Flatten chicken and season with salt and pepper.
Cook on each side 6-8 min.or until cooked through
Cool chicken and cut into cubes
Step 3
Blanch broccoli for one min drain and set aside
Step 4
Mix soup, sour cream, mayo, water, mustard., worchestershire, marjoram, and pepper in medium bowl.
Place the bread crumbs in a seperate bowl and mix with the cheeses
Step 5
Lightly spray 9x13 baking dish with cooking spray
Add broccoli, spinich and then top with chicken
Spread with soup mixture and top with bread crumb and cheese mixture. Drizzle melted butter on top. Bake 30-40 minutes Uncovered until bubbly.
