Introduction

Red potatoes are great for this recipe, but I've used russet as well. If you choose red potatoes, the skins may be left on for extra fiber. Russets should be peeled. Ingredients

    6 lbs red potatoes (scrubbed and cubed)
    1/4 c. canola or olive oil
    3 T melted butter
    2 pkg onion soup mix


Directions

In a large bowl, mix the potatoes, oil, butter, and soup mix. Turn into a large baking pan and bake for ~45 minutes in a 400 degree oven.
