Ingredients

    meatloaf:
    1 lb 96% lean ground beef (can find at Trader Joe's and Whole Foods)
    1/4 cup raw sunflower seeds without salt
    1/2 cup finely chopped onions (roughly 1/2 an onion)
    1/4 cup steel cut oats, dry
    1/2 cup panko bread crumbs
    3 large mushrooms, finely minced
    1 large egg
    1/2 tablespoon Worcestershire sauce
    1 tsp garlic powder
    salt and pepper to taste

    topping:
    1/4 c ketchup
    2 tbsp steak sauce (optional)

Tips

Additional vegetables such as zucchini, carrots, etc. can be added as additional healthy filler as desired.

For a lower carb alternative, use grated cauliflower instead of breadcrumbs and oats, and omit ketchup.


Directions

1. Preheat oven to 350 degrees

2. Mix all meatloaf ingredients together until ingredients are evenly distributed. Do not overwork mix.

3. Top with ketchup and optional steak sauce.

4. Cook for 35-45 minutes, or until cooked through - test with meat thermometer. Allow to cool to a warm temperature before cutting.

Serving Size: makes 4 dinner-size meatloaf slices
