Ingredients

1 lb roughly chopped cauliflower florets (about 6 cups)
2.5 cups low-sodium chicken broth
5 cloves garlic
1 teaspoon onion powder
1/4 cup freshly grated Parmesan cheese
2 ounces (4 tbsp) fat-free cream cheese
Tips
Only half cup of broth is accounted in nutritionals, since rest is drained an unused, but buffered for absorption.
Directions
Bring broth to a simmer and add cauliflower. Cover and cook until tender, stirring/smashing occasionally, (about 5-6 mins). Drain cauliflower over a bowl to reserve broth and add cauliflower to food processor or blender.
Return pot to stove and spray with non-stick spray or use some set aside broth and saute garlic on medium-low heat until fragrant and soft, 30-60 seconds. Add garlic from pan and onion powder into cauliflower.
Add 1/4 cup reserved broth, and cheeses. Process until smooth adding extra broth if needed. Add salt and pepper to taste.
