Introduction

Number of Servings: 4

Ingredients

    *Potato, raw, 2 cup diced
    * Leeks, 2 leeks
    * Olive Oil, 1 tbsp
    * Vegetable Broth, 3 cup
    * Half and Half Cream, 1 cup
    * Salt, 1 dash
    * Pepper, black, 1 dash
    * Nutmeg, ground, 0.5 tsp
    * Fresh Chives, 4 tbsp chopped

Directions

Slice leeks, rinse well. Dice potatoes and sautée them lightly in a casserole with the olive oil. Don't forego the olive oil for caloric reasons, it's essential for the taste and heart-healthy as well.
When leeks are slightly wilted add the vegetable broth and let simmer for 15 minutes. Let cool. Puree, add the half and half cream and season with salt, pepper and nutmeg. A little dash of dry vermouth is optional - it's not added in the calories, but i like it because my mom made it like this.
Sprinkle with chives and serve cold!

    Loved this soup. Quick, easy and delicious. You're right about keeping the olive oil for flavour. I left the skins on my new potatoes and let them brown up in the oil before adding the leeks. Definitely will make this again. - 10/18/11
