Ingredients

0.2 cup Fire Roasted Red Peppers
1 can (6 oz) Tomato Paste
1 lb Ground Beef
5 slices Bacon
1 Leek, diced
1 medium Carrot, grated
1 medium (200 g) Zucchini, grated
2 tbsp Coconut Flour
1 tsp Parsley, dried
1 tsp Thyme, dried
1 tsp Oregano, dried
1 tsp Basil, dried
1 tsp Salt
1 tsp Black Pepper
Directions
Combine red peppers and tomato paste in small sauce pot
Heat over medium-low heat and add water to desired consistency
Simmer for 15-20 minutes
Heat a separate pan over medium-high heat
Add bacon and cook until fat is rendered from bacon
Remove bacon from pan and crumble, set aside
Lower heat to medium-low
Add leek and cook until carmelized
Remove from heat and let cool
Preheat over to 375
In a separate bowl combine leek, bacon, and remaining ingredients (minus the sauce)
If mixture is too wet add coconut flour
Place meatloaf in non-stick loaf pan and cook for 1 hour
Divide into 6 servings and serve with warm red pepper sauce.
