0.75 cup Butter, unsalted
1.50 tbsp Pepper, black
1 tsp Salt
0.66 cup, diced Ham, regular (11% fat)
1 cup, grated Carrots, raw
2 tbsp chopped Fresh Chives
2 tbsp chopped Onions, raw
2 tbsp Parsley
0.50 cup, slivered Almonds
6 cup Chicken stock, home-prepared
1.33 cup Uncle Ben's Long Grain & Wild Rice
4 tbsp Cooking Sherry
1 cup Flour - Gold medal all purpose flour
4 tsp Garlic
Tips
to make a healthier and lighter version of this soup, substitute the thickening roux of flour and butter with a pure starch slurry. use a small amount of olive oil (approximately 3tblsp) to saute the onions and garlic. You can also substitute the ham for diced chicken breast.
Directions
1. Melt the butter in a large pot, and sauté the onion and garlic. Gradually blend in the flour. Cook and stir until onion is tender and flour is golden brown. Whisk-in broth, bring to a boil, and simmer 5 minutes. Stir in ham, carrots, and almonds. Season with salt and pepper, cover, and simmer 20 minutes, stirring occasionally.
2. Mix rice, half-and-half, and sherry into the soup, and continue cooking 30 minutes until rice is tender. Stir in parsley and chives then serve.
