Ingredients

    18 ounces Chicken Breast (cooked), no skin, roasted
    2 tsp Lemon Juice 'Real Lemon' 100% juice
    2 tsp Garlic powder
    1 large Onions, raw
    1 cup, strips Green Peppers (bell peppers)
    1 cup, diced Pineapple, fresh
    1 cup, pieces or slices Mushrooms, fresh
    10 tbsp Kikkoman Teriyaki Sauce & Marinade
    1 tsp Ginger, ground

Directions

THIS IS A GRILL RECIPE, but you could do this in the oven. I would cook on a cookie sheet at 400 degrees F, for about 20 min.

I estimated the amount of peppers, onion, pineapple, with my 6 chicken breast- meaning - it could be one or two. Depends on how much of each you want on your skewer. Ok, so chop your chicken into 2" x 2" squares. You could go 1 1/2" in. squares, you just want your chicken to be small enough to fit on a skewer in between your veggies. Marinate your chicken in half of the teriyaki, lemon, garlic powder (could use minced garlic), and ginger MARINADE --(leave other half set aside for basting veggies on the grill)-- for about 30 min. in a glass bowl, covered in the fridge --the longer the better. You want to toss the chicken in the marinade before putting in the fridge, just to make sure that every piece is well covered.
While the chicken is 'soaking' in the marinade, chop large pieces of the onion, peppers, and pineapple (I got mine already chopped into large pieces at the store), and rinse/dry your mushrooms. After 30 min. assemble on wooden or metal skewers. I always start out with the onion first, then chicken, mushroom, pepper, then pineapple, and repeat at least once. Once assembled, and your coals are hot, you are ready to grill. I baste my veggies at this point, because you want everything to taste similar, and yummy, a light coat of the teriyaki plus a dash of salt/pepper to taste is all that you need. Grill until the chicken is done. The veggies will cook faster, b/c they are veg. and they will have a char. I do not have a time, so you just have to watch it. Grill and enjoy! :)
