Ingredients

    2.0 lb Beef chuck
    Salt n pepper
    1/4 cup Flour
    3 tbsp Corn Oil
    1 lb Chorizo, casing removed
    1 large Onion, chopped
    4 clove Garlic, minced or grated
    1 can beef stock or consumme
    1 can fire roasted Diced Tomatoes
    1.0 tbsp Honey
    1-2 tbsp Chipotle in adobo

Directions

Pat meat dry, cut into 1 1/2 inch cubes, salt n pepper, then dredge in flour. In a large, oven safe Dutch oven on medium high heat, brown beef and set aside on plate. Brown chorizo in same pan. Add onion, garlic, and seasonings. Cook about 5 minutes. Add rest of ingredients, bring to a boil, cover and cook in oven for 90 minutes. Shred beef. Add to warm flour tortillas, with lime wedges, queso fresco, jalapenos, and thinly sliced red onions. Nutritional content does not include that last paragraph of items.
