Introduction

Pronounced cla-foo-tee, it's an easy, lighter, and less sweet type of dessert. You can substitute fresh blueberries or raspberries for the cherries. Just be sure to use enough to cover the bottom of the pie dish. Sugar substitute can be used to the custard, but I'd suggest using regular sugar to coat the bottom of the dish. Ingredients

    20 oz fresh Cherries
    1-2 tbsp Granulated Sugar
    1.0 pat of Butter
    4 large Eggs
    1/2 cup Granulated Sugar
    1/4 tsp Salt
    4 cup Flour
    1/2 tsp vanilla extract
    1/2 tsp almond extract
    1 cup Milk
    2 tbsp Butter, melted

Directions

Clean, stem, and pit cherries. Better to use whole, but you can slice in half if you don't have a cherry pitter. Rub a pat of butter on the bottom and sides of a pie dish, making sure inside is thoroughly covered. Add 1-2 tbsp of sugar and shake it around so all of the butter is covered in sugar. Put cherries into pie dish, making sure the entire bottom of dish is covered with them. In a separate bowl, beat eggs on low, add sugar, then salt. Slowly add flour and beat on low till well incorporated. Use a spatula to the sides of the bowl if needed. Add extracts, then milk and melted butter, beating on low through each. Pour over cherries. Bake in oven preheated at 350° for 40-45 minutes. (Top of clafoutis should be light golden and pulling away from sides.) Let cool. Dust with powdered sugar if desired.
