Introduction

This is modeled after a horribly caloric meal I used to get at The Cheesecake Factory when I was a little girl--the fried macaroni and cheese balls and a slice of cheesecake to top it off. Since I went almost entirely dairy-free and started majorly watching calories, I've found myself craving those foods. And when a craving strikes, you just have to make a substitute, right? The recipe really does emulate the textures and tastes of that childhood meal. Ingredients

    For the "Macaroni":

    2 Trader Joe's frozen turkey meatballs
    1/4 cup marinara sauce
    2 tbsp hummus
    1 slice Ezekiel Bread
    1 tsp powdered parmesan cheese

    For the "Cheesecake":

    2 tbsp Trader Joe's Vegan Plain Classic Cream Cheese Alternative
    1 tbsp sugarless nut butter
    1 piece (100 calories) of whatever kind of chocolate you'd like

Directions

For the "Macaroni":

Put the marinara sauce and the hummus in a microwave-safe bowl and mix until well combined. Very finely chop (maybe even grate) the Ezekiel bread, making breadcrumbs. Pour half of these into the bowl on top of the marinara sauce/hummus mixture. Reserve the other half. Place the frozen meatballs on top of all this. Mix the cheese with the remaining breadcrumbs and pour on top of the meatballs. Cover and microwave for three minutes.

For the "Cheesecake":

Melt the chocolate by placing it in a small bowl or ramekin. Then add the cream cheese alternative and nut butter; mix thoroughly.
