Introduction

Ingredients

    2.5 cup King Arthur 100% Unbleached White Whole Wheat Flour
    1 cup, unpacked Brown Sugar
    0.75 tsp Salt
    1 tsp Baking Powder
    0.5 tsp Baking Soda
    1 tsp Cinnamon, ground
    2 cup, unthawed Blueberries, frozen (unsweetened)
    1 tsp Vanilla Extract
    0.3 cup Canola Oil
    1.5 cup Milk, 1%
    1.5 tablespoons vinegar

Directions

Preheat oven to 400 degrees, and prep 18 muffin cups. Add vinegar to milk and set aside. Mix dry ingredients in a bowl. In a separate bowl, mix wet ingredients in with the milk. Mix milk mixture into dry mixture until just combined. Add blueberries. Scoop mixture into muffin cups. Bake for 18-20 minutes, or until a toothpick inserted into the muffin comes out clean.
