Introduction

Low-fat but spicy and creamy, this is my family's favourite recipe for cheesy cauliflower. We like to mix in broccoli and green beans too! Low-fat but spicy and creamy, this is my family's favourite recipe for cheesy cauliflower. We like to mix in broccoli and green beans too!
Number of Servings: 4

Ingredients

    1 medium head cauliflower, chopped
    1/4 cup skim milk powder
    3 tbsp flour
    1/4 tsp salt
    1/2 tsp garlic powder
    1/2 tsp oregano
    1/4 tsp basil
    1/4 tsp cayenne pepper
    1/8 tsp coarse ground black pepper
    1 1/2 cups skim milk
    1/3 cup shredded low-fat old Cheddar
    1 tbsp Dijon mustard

Directions

Steam the cauliflower until just tender, 3 - 4 minutes. Transfer to a medium bowl and keep warm.
In a medium saucepan, whisk together the dry milk powder, flour, salt, herbs and spices.
Place pan over medium heat, and slowly whisk in the skim milk until no lumps remain.
Cook, whisking, over medium heat for 5 minutes.
Stir in the cheese and cook until melted.
Whisk in the mustard.
Pour sauce over the cooked cauliflower in the serving dish and toss to combine well.
Serve immediately.

    I will certainly make this again; it's the first cauliflower I ever liked! The only change I made was to serve the sauce on the side. We had over half left over, and each serving went down to about 65 calories!! I froze the leftover sauce in an ice cube tray to be used in small bits later. - 1/1/09

    Absolutely delicious!!! I served with a parmesan crusted cod fillet. My husband does not care a great deal for fish but said he would eat it more often as long as I make this cauliflower with it. - 5/5/10

    Love how easy the sauce comes together. And this dish is delicious! Had to leave out garlic (as my mom-in-law doesn't like it) but will add it when I make it again! - 3/26/10

    Can you just use Skim milk instead of the dry milk? And if so how much would you say? - 12/19/09
