Ingredients

    3.0 clove Garlic
    4.0 leek Leeks
    4.0 large (3" to 4-1/4" dia.) Potato, raw
    5.0 cup (8 fl oz) Water, tap
    1.0 cup Milk, 1%
    2.0 tsp Salt
    1.0 tsp Pepper, black
    4.0 serving Bacon - Applegate Farms Natural Sunday Bacon

Directions

Cut potatoes into large chunks. Add to water and cook until just tender. Reserve potato water. Rough chop bacon. In soup pot, heat bacon until fat begins to render. Add chopped shallots and garlic and saute over medium heat until soft. Wash and chop leeks. Add leeks to soup pot and mix together. Sweat leeks with bacon mixture for 10 min. Add potatoes and water. Bring to a boil. Add salt and pepper to taste. Puree using an immersion blender (or in a regular blender in batches.) Just before serving, add milk and stir.
