Introduction

Very quick and easy, can use fresh instead of canned tomatoes. Very tasty hot or cold. Very quick and easy, can use fresh instead of canned tomatoes. Very tasty hot or cold.

Ingredients

    2 cans diced tomatoes drained
    3 chicken breasts, diced
    2 tbs pine nuts
    3 cloves garlic
    2 tbs olive oil
    1 lb Whole wheat spaghetti
    4 cups fresh spinach

Directions

Cut and cook chicken in 1 tbs olive oil, with salt, pepper and italian seasoning(no salt added) to taste. At the last minute add the garlic, shut off the heat.
Toast pine nuts in a dry pan until golden. Wilt spinach in a dry pan. In a large bowl mix pine nuts, tomatoes, spinach and cooked chicken.
Cook pasta and drain then drizzel 1tbs of olive oil over the top to prevent pasta from clumping.
Serve.
