Ingredients

    1 lb Summer Squash, sliced (2 yellow squash, 7-8 inches long)
    3/4 lb Baby Zucchini, sliced (2 zucchinis, 6-7 inches long)
    2/3 cup grated Parmesan Cheese (2-1/3 cup portions)
    5 tbsp unsalted Butter
    1 Medium Green Bell Pepper, sliced and diced
    3-4 spring onions, diced

Tips

I like my veggies a little bit crisp and definitely not soggy, so watch your cooking time to get the best experience from this dish.


Directions

1. Preheat oven to 350 degrees.
2. Spray an oven-safe baking dish or casserole pan with non-stick cooking spray.
3. Place ingredients in layers: summer squash, zucchini, onions and peppers, 1/3 cup of Parmesan cheese, 2 1/2 tbsp of butter in pieces. Repeat that layer again.
4. Bake for 20-30 minutes at 350 degrees.
