Ingredients

    I pound Chicken Breast (Grilled)
    1 Avocado
    1 Bell Pepper (any color)
    1/2 cup celery
    I small or medium cucumber
    1/2 cup shredded carrots
    1 small head cauliflower (grilled)
    1/4 cup onion
    6 tablespoons Balsamic Vinegar
    2 tablespoons Olive Oil

Directions

The only cooking on this is to grill the chicken breast and the cauliflower. I put the cauliflower in some tin foil and spray with a little Pam and stick it right on the grill when I'm cooking the chicken

    Loved this! Great flavor and very filling. Couldn't eat a whole portion. Will reduce the balsamic vinegar next time I make it... was a little too vinegary for my me. - 3/23/16
