Ingredients

    1 can yellowfin tuna in olive oil (genova tonno, crown prince natural, etc)
    2.5 oz reduced fat feta
    2 small-med campari tomatoes
    1 clove garlic
    .25 c. red onion, chopped
    1 small carrot, chopped
    .5 small granny smith apple, chopped
    1 tsp olive oil
    1 tsp raw flax seed
    several twists of black pepper

Directions

mix it all up

add about 1/3 mixture to a whole wheat tortilla laid out with mixed greens, use to top cuts of crusty bread, or eat alone.

this is not a low-fat recipe, but it is rich in good fats and protein and very flavorful!

makes roughly 3.5-4 servings if eating with salad greens and/or bread, 2-3 servings if eating alone.
